Strawberry Vinaigrette Recipe

This will sauce up your salads.
Its very quick and easy to make.

Ingredients
- 1/2 pint strawberries, tops cut off
- 1 cup olive oil
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon dried leaf tarragon, crumbled
- 1/4 teaspoon sugar
Directions
- Combine the olive oil, strawberries, vinegar, salt, pepper, tarragon and sugar in a food processor.
- Pulse until the strawberries are pureed.
- The dressing can be made ahead of time and chilled.
- Stir before using.
- Makes 1 1/2 cups.

This sounds delicious! I have some itsy bitsy alpine strawberries and fresh tarragon growing in containers on my patio. I may have to fill in a little with commercial strawberries though.
