Chicken With Rosemary And Lime Recipe

Ingredients
  • 1 chicken (1.8kg) in pieces and with the skin on
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 1 tablespoon fresh rosemary
  • 3 garlic cloves, chopped
  • salt
  • freshly ground black pepper
  • 80ml (1/3 cup) dry white wine
  • 2 tablespoons lime juice
  • zest of 1 small lime

Directions
  1. Rinse the chicken pieces and pat dry.
  2. Heat oil and butter in a large pan over medium heat. Place the chicken pieces without overlapping them.
  3. Sprinkle with salt and pepper and cook until golden. Turn the pieces, sprinkle again with salt and pepper and cook until golden – both sides should be nicely browned.
  4. Add the rosemary, garlic and wine. Cook until tender – if it gets too dry, add a little water (I didn’t have to).
  5. When it’s cooked through, add the lime zest and juice. Cook for another minute and serve right away.
