Chicken with rosemary and lime

- 1 chicken (1.8kg) in pieces and with the skin on shopping list
- 2 tablespoons vegetable oil shopping list
- 2 tablespoons butter shopping list
- 1 tablespoon fresh rosemary shopping list
- 3 garlic cloves, chopped shopping list
- salt shopping list
- freshly ground black pepper shopping list
- 80ml (1/3 cup) dry white wine shopping list
- 2 tablespoons lime juice shopping list
- zest of 1 small lime shopping list
How to make it
- Rinse the chicken pieces and pat dry.
- Heat oil and butter in a large pan over medium heat. Place the chicken pieces without overlapping them.
- Sprinkle with salt and pepper and cook until golden. Turn the pieces, sprinkle again with salt and pepper and cook until golden – both sides should be nicely browned.
- Add the rosemary, garlic and wine. Cook until tender – if it gets too dry, add a little water (I didn’t have to).
- When it’s cooked through, add the lime zest and juice. Cook for another minute and serve right away.
