LARGE BATCH EXCELLENT FRUIT CAKES This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 6 cups brown sugar
  • 4 cups butter
  • 12 eggs
  • 1 cup buttermilk
  • 1 cup honey
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1-1/2 teaspoons cloves
  • 8 cups flour
  • 2 teaspoons baking soda in a little hot water
  • 17 pounds fruit
  • 7 quarts pecans

Directions
  1. Mix sugar, butter, eggs, buttermilk, honey, cinnamon, nutmeg, cloves and flour by hand.
  2. Add fruit and pecans.
  3. Spray 12 large loaf pans with nonstick cooking spray.
  4. Fill pans 2/3 full then cook in pans filled half full of water to prevent over cooking.
  5. Bake at 275 for one hour then allow to rest for 10 minutes then remove from pan and cool.

I am probably one of the few people who actually like fruit cake (in small doses). Might actually try this for the holidays. Thanks for posting the recipe.


Hey Sweetie, I miss your compliments, where have you been. I miss you. I love fruitcake (the drunken kind) but I can't deal with the candied fruit, so I use dried fruit marinated in rum or brandy. This recipe sounds very good. You have my 5. Have a good night, w/ hugs....Cheryl


PS. Is the 275* a type-o or should it be 375*
