Lemon Refrigerator Cookies Recipe
LEMON REFRIGERATOR COOKIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Worley Estate in Terrell, Texas in 1991.

Ingredients
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 1 cup unsalted butter softened
  • 2 teaspoons lemon extract
  • 2 eggs
  • 3 cups flour
  • 1 tablespoon grated lemon peel
  • 1-1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup finely chopped pecans

Directions
  1. In large bowl combine sugar, brown sugar, butter, extract and eggs then beat well.
  2. Add flour, peel, baking powder and salt and blend well then stir in nuts.
  3. Divide dough into 3 equal parts.
  4. Shape each into roll and wrap with plastic wrap then refrigerate 2 hours.
  5. Heat oven to 425 then cut into 1/4" slices.
  6. Place slices 1" apart on ungreased cookie sheets and bake 7 minutes.
  7. Remove immediately from cookie sheets and allow to cool on racks.
