Ingredients
  • DRESSING:
  • 1/2 cup vegetable broth
  • 1-1/2 tsp. cornstarch
  • 3 Tbsp. fresh lime juice
  • 2 tsp. evoo
  • 3/4 tsp. sugar
  • 1/4 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black peppercorns
  • SALAD:
  • 1 lb. medium shrimp, cooked, peeled
  • 1-1/2 cups julienne-cut yellow squash
  • 1-1/2 cups julienne-cut zucchini squash
  • 1-1/2 cup grape tomatoes, halved
  • 1 cup fresh corn kernels
  • 2 Tbsp. minced fresh cilantro

Directions
  1. Combine broth and cornstarch in a small saucepan, stirring with a wire whisk, bring to a boil.
  2. Cook 1 minute, stirring constantly.
  3. Remove from the heat, stir in the next 5 ingredients (juice through peppercorns).
  4. Cool.
  5. Combine shrimp and remaining ingredients in a large bowl.
  6. Add dressing mixture to shrimp mixture,.
  7. Tossing well.
