This is a lite version of potato cakes. Its yummy for the ones that like oysters.

Ingredients
  • 4 cups mashed potatoes
  • 1/4 cup egg subsitute
  • 1 bunch scallions, thinly sliced
  • 2 tablespoons thyme
  • fresh ground pepper to taste
  • 16 smoked oysters

Directions
  1. Mix potatoes, egg substitute, scallions, thyme and pepper by hand in a large bowl.
  2. With lightly floured hands, shape potatoes cakes with an oyster in the center.
  3. Cover and chill 1 hour.
  4. Heat a skillet to medium high heat.; add cakes and brown for 5 minutes on each side.
