How to make it

  • Mix potatoes, egg substitute, scallions, thyme and pepper by hand in a large bowl.
  • With lightly floured hands, shape potatoes cakes with an oyster in the center.
  • Cover and chill 1 hour.
  • Heat a skillet to medium high heat.; add cakes and brown for 5 minutes on each side.
