How to make it

  • Brown chops in oil on both sides(I sometimes grill them first). Remove chops from pan and add onions and mushrooms . Saute until mushrooms start to turn brown and most of the liquid evaporates, add garlic and cook for another 2-3 minutes. Add chops to a dutch oven, top with onions and mushrooms, then add remaining ingredients and cover. Bring to boil, then reduce and simmer semi-covered (lid slightly opened) for one hour. Serve over garlic mashed potatoes.

    Sounds very good. I particularly like that you don't douse the chops in liquid. It might be interesting if you omitted the tomatoes altogether, and covered the dutch oven and baked it in the other oven at a low temp, maybe 300, even lower if that keeps what liquid there is bubbling. This also reduces the lambiness fishtrippin fears.

    I made this last night to rave reviews from myself and my husband. Delicious! I did, however, tweak it a bit by adding a half a cup of red wine. Yummy!

    I could probably get my family to eat these. I love lamb they don't. I think the tomatoes would cut some of the lambieness... (for lack of a better word)
