Meatloaf Muffins Recipe
These are neat, and gives the dieter a better idea of how much he/or she is eating with no guessing. :) Below is the original recipe, however I would modify how much water you add, though. Use your judgement.

Ingredients
  • 1 pound raw extra lean ground beef
  • 1 package Stove Top stuffing mix
  • 1 cup water
  • 2 egg whites

Directions
  1. Mix together and divide into 12 muffin cups that have been sprayed with non-stick cooking spray. Bake at 350 degrees for 35-40 minutes.
  2. **Although these still had good flavor, the amount of water called for made these a bit too mushy. Next time I'll probably cut the water amount by half or more.
  3. **I also add Worcestershire sauce to this recipe (among other spices)...meatloaf is not meatloaf without it!!
  4. 2 WW points per muffin.

This is much simpler than my recipe! My kids really like getting their own "meat loaf"! Good recipe.

This looks great!! Although I would probably substitute ground turkey because I usually do not buy ground beef. I looked up the point values and this recipe is 2 pts per muffin weather you use turkey or beef. Great pt value as far as I am concerned. I plan on serving it with a huge green salad!! Perfect idea!!


These are good. I have made this recipe and I love it. Everyone at work drools when I heat them up for lunch. Top with a little ketchup and/or Dijon mustard...YUM!
