Ingredients
  • 1-1/2 pounds skirt steak
  • 1/4 cup oil
  • 1 teaspoon black mustard seeds
  • 1/2 teaspoon fenugreek seeds
  • 6 garlic cloves crushed
  • 1 tablespoon ginger finely chopped
  • 3 medium white onions finely sliced
  • 1-1/2 teaspoons turmeric
  • 2 tablespoons coriander
  • 1 tablespoon cumin
  • 2 teaspoons chili powder
  • 3 teaspoon salt
  • 2 tablespoons vinegar
  • 2 teaspoons garam masala
  • 2 tablespoons extra vinegar
  • 3/4 pound cubed potatoes
  • 2 tablespoon fresh coriander

Directions
  1. Cut steak into cubes.
  2. Heat oil and fry mustard seeds until they burst then add fenugreek, garlic, ginger and onion.
  3. Fry until onions are golden then add turmeric and fry 1 minute.
  4. Add coriander, cumin and chili then stir well.
  5. Add salt and vinegar and fry until liquid evaporates.
  6. Sprinkle in garam masala and mix well then add meat and turn until coated.
  7. Add extra vinegar if spices start to stick then reduce heat and cover then simmer 2 hours.
  8. Add cubed potatoes and cover then cook 30 minutes longer and garnish with coriander.
