Barbeque Chicken Sandwich Recipe
This is a sandwich version of very common barbeque chicken pizza. I'm continuing to play with my new stove top smoking toy, for more info check out my Spare rib recipe

Ingredients
  • 2-3 bone-in skin-on chicken breasts
  • (yes you can use boneless, skinless but it won’t be as good)
  • 5 slices of bacon
  • a good barbeque sauce
  • 2 slices of bread or hamburger buns
  • a couple rings of raw red onion
  • a slice of tomato and a little cilantro
  • Same dry rub from my rib recipe:
  • ¾ cup dark brown sugar
  • 1½ tsp ground coriander
  • 2 tbsp garlic powder
  • 1 tsp ground ginger
  • ½ tsp ground pepper
  • 2 tbsp lemon pepper
  • 1 tbsp seasoned salt
  • ½ tsp cloves
  • ½ tbsp chili powder
  • ½ tbsp paprika
  • Plus ½ tsp ground cumin

Directions
  1. Prep and cooking:
  2. Quickly rinse the chicken and coat the chicken in the rub
  3. Cover and let it sit in the fridge for at least 1 hour, but up to overnight would be fine
  4. Smoke or roast the chicken at 250 for around 2 hours, over until the internal temp reaches 170. If roasting, make sure to cover the chicken so it doesn’t dry out.
  5. In the last 30mins coat the chicken breasts in a good barbeque sauce, store bought is fine, homemade is better and let them remain in the oven for 15mins
  6. Turn on the broiler and brown the chicken, both top and bottom for the last 15mins
  7. While they are cooling down make the 5 slices of bacons, use medium heat so they don’t burn
  8. You want it to be crispy (good texture balance) and a nice cooked red color not burnt or undercooked
  9. Once the chicken is cool to handle pull all the meat and skin off the bone and put in a large bowl, you don’t want to cut the meat because you are going to pull the chicken
  10. Once all the meat is off pick up each large piece and pull the meat apart, like your shredding it
  11. Once the bacon is cooled break up the bacon into small to medium size pieces and put with the chicken
  12. Then add about 2-4 tbsp of Barbeque sauce (depending on how dry the chicken is you may need more) Add this about a tbsp at a time, you’ll notice the chicken absorbing it because there won’t be any sauce on the sides of the bowl. You want to keep adding sauce until the sides of the bowl start showing a little barbeque sauce, which means the chicken is saturated, but not soaked
  13. Cover and let sit in your fridge over night.
  14. The next day take about a cup’s worth of chicken/bacon and heat it in the microwave
  15. Assembly:
  16. Top piece of toasted bread or hamburger bun
  17. Couple rings of raw red onion
  18. A couple sprigs of cilantro (roman could work if you don’t like cilantro)
  19. The heated up chicken
  20. a cold slice of tomato
  21. Bottom piece of toasted bread or hamburger bun
  22. Personally: I made 5 piece of chicken and Aimee and I each had a piece for dinner, and then used the rest to make sandwiches for lunch. I simply brought everything and assembled it in the kitchen where I work, super easy and very tasty. Had 10 people ask me what smelled so good.
