Pumpkin Pound Cake With Walnut Sauce Recipe
Another elegant pound cake sure to please all. This one is so full of wonderful flavors you could never go wrong. I like to serve it warm with homemade vanilla ice cream. Enjoy

Ingredients
  • 1-1/2 cups butter softened
  • 2-3/4 cup sugar
  • 6 eggs
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all purpose flour
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 cup canned pumpkin
  • Walnut Sauce:
  • 1 cup packed brown sugar
  • 1/2 cup whipping cream
  • 1/4 cup corn syrup
  • 2 tablespoons butter
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon vanilla extract

Directions
  1. In a mixing bowl cream butter and sugar.
  2. Add eggs one at a time beating well after each addition.
  3. Stir in vanilla.
  4. Combine the dry ingredients and add to creamed mixture alternately with pumpkin beating just until combined.
  5. Pour into 2 greased and floured loaf pans.
  6. Bake at 350 for 65 minutes.
  7. Cook 10 minutes before removing from pans to wire racks to cool completely.
  8. For sauce combine brown sugar, cream, corn syrup and butter in a saucepan then bring to a boil over medium heat stirring constantly.
  9. Reduce heat then cook and stir 5 minutes longer.
  10. Remove from heat and stir in walnuts and vanilla.
  11. Serve warm over the cake.
