  • Heat the oil in a wok on high heat and add the shallots,lemon grass, blachan,chillies and stir rapidly for 30 seconds. Add the pork and stir fry for 2 minutes. Add the coconut milk, chicken stock, lemon juice and simmer for 30 minutes. Sprinkle with the orange zest and cilantro and serve.
