Lemon Chiffon Blueberry Cups Recipe
Something like a cross between blueberry cheesecake and lemon chiffon pie, with fresh blueberries served chilled in individual dessert cups. No cooking. We made it a second time using fresh raspberries and sliced banana. Again delicious!

Ingredients
  • 1-2 c. fresh blueberries (or fresh raspberies, banana, nectarines...)
  • 1 can sweetened condensed milk
  • 1/3 c. lemon juice
  • 1 egg yolk
  • 6 oz. cream cheese

Directions
  1. In a large mixing bowl, combine sweetened condensed milk, lemon juice, egg yolk and cream cheese. Whisk with a french whisk until very well blended, then continue whisking for a minute or two until it starts to thicken by itself.
  2. Place a layer of fresh blueberries in 4-6 dessert cups or individual serving bowls.
  3. Spoon the mixture over each one.
  4. Refrigerate until serving time. Serve chilled.
