This is one of my family's favorite meals. I especially like it in the summer, when it's too hot to turn on the oven. Gotta love that slow cooker (or anything that doesn't heat up the kitchen)!

Ingredients
  • 1 2-lb london broil, chuck roast, or round roast (whichever's on sale)
  • 3 tsp cumin
  • 3 tsp chili powder
  • 1 tsp garlic powder
  • 1 small onion, sliced
  • 1 T vinegar, any kind except balsamic (I use more - we like our bbq a little tangy, N. Carolina rather than Texas)
  • 1 4.5 oz can mild green chopped chilis
  • 8-inch flour tortillas
  • Toppings:
  • shredded cheese, cheddar or monterey jack
  • refried beans
  • chopped tomatoes
  • sour cream
  • guacamole
  • salsa/picante sauce

Directions
  1. Trim fat from meat.
  2. Rub the cumin, chili powder & garlic powder over both sides of the meat. (These spices are a great substitute for store-bought taco seasoning mix: WAY cheaper, and no sodium!)
  3. Spray slow cooker with cooking spray.
  4. Place meat in the crock pot.
  5. Add onion, vinegar, and green chilies.
  6. Cover, and cook for 8 hours on low (4 hours on high).
  7. Shred meat with 2 forks.
  8. Warm beans and tortillas according to package directions.
  9. Let everybody build their own burrito.

This was fantastic! A great change from our usual beef dinners. The only big change I made was to use canned salsa verde instead of the chilis - my friend "borrowed" my can opener last week, and only the salsa verde had a pop top I could open! Still, delicious and a new family favorite.
