Ingredients
  • 3 slices bacon, crumbled
  • 10 small red potatoes, unpeeled and halved (about 1 and 1/2 lbs)
  • 1/2 C sour cream
  • 2 Tbl sliced green onions (2 medium)
  • 1 tsp chopped fresh dill (1/2 tsp dried)
  • dash of pepper
  • 1/4 C grated Parmesan
  • Fresh dill or parsly for garnish

Directions
  1. Cook bacon in microwave, cool and crumble
  2. Place potatoes, cut side down in a microwavable dish (do in batches, if necessary)
  3. Add 2 Tbl of water and cover tightly with microwavable plastic wrap
  4. Microwave on high 9 - 12 minutes or until tender
  5. Let stand 3 minutes
  6. Drain and cool slightly
  7. In a small bowl combine sour cream, green onions and dill
  8. Turn potatoes over and cut a small slice from bottom to make them stand upright, if needed
  9. Top each with a dollop of the sour cream mixture, sprinkle with pepper and Parmesan
  10. Garnish with dill or parsley, if desired
