How to make it

  • Cook bacon in microwave, cool and crumble
  • Place potatoes, cut side down in a microwavable dish (do in batches, if necessary)
  • Add 2 Tbl of water and cover tightly with microwavable plastic wrap
  • Microwave on high 9 - 12 minutes or until tender
  • Let stand 3 minutes
  • Drain and cool slightly
  • In a small bowl combine sour cream, green onions and dill
  • Turn potatoes over and cut a small slice from bottom to make them stand upright, if needed
  • Top each with a dollop of the sour cream mixture, sprinkle with pepper and Parmesan
  • Garnish with dill or parsley, if desired
