Citrus Garlic Pork Loin - Weight Watchers Recipe

  • 1 lb center pork loin
  • 3 cloves garlic, minced
  • 1/2 cup fresh lime juice
  • 1/2 cup grapefruit juice (not cocktail)
  • 1/2 cup soy sauce
  • 1/2 tsp hot pepper sauce (or more!)

Directions
  1. Preheat oven to 450.
  2. Mix garlic, lime, grapefruit, soy, and pepper sauce. Allow to sit at room temp for half an hour to an hour so the flavors can blend. (I've left out this step when pressed for time & it still tasted great.)
  3. Place pork loin in marinade and turn to coat evenly.
  4. Cover and put in fridge for at least 1.5 hours, but no more than 5.
  5. Turn occasionally. (Outside of meat may lighten in color from the citrus juices.)
  6. Drain pork and reserve marinade.
  7. Roast pork for 10 minutes, then reduce heat to 325 and continue to roast until internal temp reaches 145-150, about 30 minutes.
  8. Boil marinade for 3 minutes, then reduce heat and simmer for another 10 minutes.
  9. Slice pork into medallions and drizzle marinade on top.
  10. This is good with rice and green beans.
