Chili N Cheese Drop Biscuits Recipe
These can be an appetizer or a side dish! I've even made them for breakfast! They're tasty with a big bowl of chili, or with sliced ham in the middle!

Ingredients
  • 2 cups self-rising flour
  • 1 teaspoon baking soda
  • 2 Tablespoons chilled CRISCO
  • 1 cup shredded Monterey Jack cheese
  • 1 (4-oz.) can diced green chiles, well drained, --OR-- 2 finely diced fresh jalapenos
  • 1 garlic clove, minced
  • 3/4 cup buttermilk
  • 1 large egg, beaten

Directions
  1. Preheat the oven to 425F.
  2. Grease a large baking sheet and set aside.
  3. In a large mixing bowl, whisk together the flour and baking soda.
  4. Add the shortening and cut it into the flour with a pastry cutter until the mixture is crumbly.
  5. Add cheese, jalapenos, and garlic and stir till well blended.
  6. Add buttermilk and egg and stir until the dough is well blended but still slightly wet.
  7. Drop the dough by rounded tablespoons on to the prepared baking sheet about 1 inch apart and bake in the upper third of the oven until golden brown, 12 to 15 minutes.
  8. Serve warm.
  9. Makes about 16 biscuits.
