Grilled Chicken Breat with Tomato Chutney

- 2lbs ripe tomatoes,peeled,seeded and cut in 1/2" pieces shopping list
- 3/4c cider vinegar shopping list
- 1/2c packed brown sugar shopping list
- 1 small onion,finely chopped shopping list
- 11/2tsp salt shopping list
- 4tsp ground ginger shopping list
- 11/2tsp ground cumin shopping list
- 2Tbs veg oil shopping list
- 1tsp ground coriander shopping list
- 1/4tsp cayenne pepper shopping list
- 4 small boneless,skinless chicken breasts(about 11/2lbs total) shopping list
How to make it
- In a medium-size saucepan,stir together tomatoes,vinegar,brown sugar,onion,1tsp of salt,1tsp of ginger and 1/2tsp cumin.. Bring to a boil over high heat. Boil for 18-22 mins,stirring occasionally,or until the liquid has cooked off;set aside and keep warm.
- Meanwhile,place veg oil,remaining 2tsp ginger,1tsp cumin ,the coriander and cayenne in a shallow glass dis;stir to combine. Place chicken in the mixture and turn to coat.
- Heat gas grill to med-high or prepare charcoal grill with med-hot coals. Sprinkle chicken with remaining 1/2tsp salt and grill for about 7 mins per side till internal temp. reads 160 on an instant read thermometer. serve chicken with a heaping 1/4c chutney.
