How to make it

  • In a medium-size saucepan,stir together tomatoes,vinegar,brown sugar,onion,1tsp of salt,1tsp of ginger and 1/2tsp cumin.. Bring to a boil over high heat. Boil for 18-22 mins,stirring occasionally,or until the liquid has cooked off;set aside and keep warm.
  • Meanwhile,place veg oil,remaining 2tsp ginger,1tsp cumin ,the coriander and cayenne in a shallow glass dis;stir to combine. Place chicken in the mixture and turn to coat.
  • Heat gas grill to med-high or prepare charcoal grill with med-hot coals. Sprinkle chicken with remaining 1/2tsp salt and grill for about 7 mins per side till internal temp. reads 160 on an instant read thermometer. serve chicken with a heaping 1/4c chutney.
