Ingredients
  • 2lbs ripe tomatoes,peeled,seeded and cut in 1/2" pieces
  • 3/4c cider vinegar
  • 1/2c packed brown sugar
  • 1 small onion,finely chopped
  • 11/2tsp salt
  • 4tsp ground ginger
  • 11/2tsp ground cumin
  • 2Tbs veg oil
  • 1tsp ground coriander
  • 1/4tsp cayenne pepper
  • 4 small boneless,skinless chicken breasts(about 11/2lbs total)

Directions
  1. In a medium-size saucepan,stir together tomatoes,vinegar,brown sugar,onion,1tsp of salt,1tsp of ginger and 1/2tsp cumin.. Bring to a boil over high heat. Boil for 18-22 mins,stirring occasionally,or until the liquid has cooked off;set aside and keep warm.
  2. Meanwhile,place veg oil,remaining 2tsp ginger,1tsp cumin ,the coriander and cayenne in a shallow glass dis;stir to combine. Place chicken in the mixture and turn to coat.
  3. Heat gas grill to med-high or prepare charcoal grill with med-hot coals. Sprinkle chicken with remaining 1/2tsp salt and grill for about 7 mins per side till internal temp. reads 160 on an instant read thermometer. serve chicken with a heaping 1/4c chutney.
