Ingredients
  • 168g (6oz) margarine
  • 168g (6oz) caster sugar
  • 3 eggs
  • 252g (9oz) SR flour, sieved
  • 2 drops almond essence
  • Topping (butter icing):
  • 56g (2oz) butter/marg
  • 112g (4oz) icing sugar, sieved
  • food coloring (optional)
  • Additional flavours:
  • vanilla essence
  • almond essence
  • grated orange/lemon rind
  • chopped walnuts

Directions
  1. Preheat the oven to 170*C
  2. In a large bowl, cream the marg and sugar until light and fluffy.
  3. Add eggs one at a time and beat well
  4. Fold in sifted flour
  5. Place teaspoons of mixture into paper cases
  6. Bake until golden brown and springy to touch.
  7. Butter icing:
  8. Cream fat and gradually add icing sugar, mix well.
  9. Add a drop of food colouring
