Plum Kuchen

- 1/2 cup butter at room temp. shopping list
- 1 cup granulated sugar plus 1 tablespoon for topping shopping list
- 2 large eggs shopping list
- 1 cup flour shopping list
- 1 tsp. baking powder shopping list
- 1 1/4 lbs. Italian or blue plums, quartered shopping list
- 1 tablespoon lemon or lime juice shopping list
- pinch of cinnamon shopping list
How to make it
- Cream together butter and 1 cup sugar until well blended; beat in eggs, then flour and baking powder. Beat to mix well; turn into buttered 9-inch springform pan.
- Place plum quarters on top of batter, close together in circles starting at the outside, in a flower or petal pattern. Sprinkle with lemon juice.
- Mix remaining sugar with cinnamon; sprinkle over top.
- Bake in center of 350F oven for 1 hour or until cake tester in center comes out clean and top is golden brown.
- Serve warm or cold with whipped cream, slightly sweetened, or low-fat yogurt or vanilla ice cream.
