Mustard Pork Medallions Recipe
This is an easy fast way to cook pork. I always get my butcher to pound it out, but I've done it myself too. :D

Ingredients
  • 1/2 cup seasoned bread crumbs
  • 1/2 tsp dried thyme
  • 1/4 tsp garlic salt
  • 1/4 tsp onion powder
  • 1 1/4 lb. Pork Tenderloin
  • 1/4 cup Dijon mustard
  • 1 TBSP butter

Directions
  1. Preheat oven to 425 degrees F.
  2. In a shallow bowl combine crumbs with thyme, garlic salt, and onion powder.
  3. Cut tenderloin crosswise into 12 pieces. Pound each piece into 1/4 thick slices.
  4. Combine mustard and butter.
  5. Brush on to pork and coat with bread crumbs.
  6. Place in a greased shallow baking dish and bake for 10 minutes.
  7. Turn and bake for an additional 5 minutes.
