Cousin Lisas Quiche Recipe

Ingredients

2 T butter

small onion diced finely

mushrooms sliced

2 cups baby spinach (uncooked)

cooked ham diced

2 T flour

1 t salt

1/2 t pepper

1 cup milk

3 beaten eggs

1 cup cheddar cheese grated

Pie crust... optional. (I mostly make it without.)

Directions

Melt butter and saute mushrooms and onions.

Stir in flour, salt and pepper.

Add milk and cook until thickened.

Remove from heat and add eggs, spinach, ham and cheese.

Pour into greased pie plate and bake at 375 for 30 minutes.

Let stand 10 minutes before servng.

If you want a crust, put crust in pie plate, layer cheese on the bottom and then pour egg mixture on and bake the same way.
