Awesome Faux Potato Chowder Recipe
This chowder is a great dish to serve in the wintertime after being out in the snow. It warms you up quickly. It is so thick and rich! It has a mild flavor that kids will love too. Oh and did I mention it's Low Carb?

Ingredients
  • 1 head of Cauliflower (cleaned & chopped) OR
  • 1 frozen 10oz bag of Cauliflower
  • 1 16oz roll of Sausage
  • 1 8oz block of Cream Cheese
  • 8oz of canned Mushrooms + liquid
  • 1/2 C. EACH of Onions & Celery
  • 2 Chicken Bouillon Squares (Knoor brand in Spanish Food Section)
  • 2 C. Water
  • 1/2 C. Half & Half
  • ~~~~~Alternate Ingredients~~~~~
  • You can use Potatoes instead of or added to the Cauliflower
  • You can use Cream of Mushroom Soup instead of the 1/2 & 1/2 and canned Mushrooms
  • Some Roasted Chicken thigh meat would also be really good added to this or in place of the Sausage

Directions
  1. Brown Sausage in the bottom of a Dutch Oven on Med. heat
  2. Add Onions & Celery to cook in Sausage drippings until tender
  3. Add Cauliflower ( froz/raw or cooked in microwave)
  4. Immediately add Chicken Broth & Water & bring to a slight boil
  5. Then scrape up the Yummy stuff from the Sausage and Vegis cooking at the bottom of the pan
  6. Add Mushrooms
  7. Cook until Cauliflower is tender
  8. Turn down the heat to Low
  9. Add Cream Cheese and break up with spoon
  10. Stir until well blended
  11. Lastly add your Half and Half
  12. Stir for a min more to ensure your chowder is heated through evenly (but do not let it come to a boil)
  13. Serve & Enjoy!

What is a 16 oz roll of sausage? Is that like reg pork sausage?


Yes, sorry! I guess I just assume being from the South that that was a given. :o) You could use something fancier in it's place though. Whatever you like!
