Faux Potato Salad Recipe
This dish is a knock off of Old fashioned Southern Potato Salad. Cool, Creamy, & Comforting. Great with BBQ or Fried Chicken! Kids and adults both will love it!

Ingredients
  • 10oz bag of frozen Cauliflower
  • 3 Lg. Eggs Chopped
  • 1/4 C Diced Onions
  • 1/2 C Chopped Celery
  • 1/2-1 C Mayo
  • 2 TBS Mustard
  • 1 TBS Pickle relish
  • Sprinkling of Sweet Paprika

Directions
  1. Microwave Cauliflower until VERY tender (This should remove alot of the flavor, making it better resemble cooked potato's mild flavor) I do this in increments checking it to make sure it is not over done. Covered with plastic wrap will take alot less time than uncovered.
  2. Chop the Vegis while the Cauliflower is in the Microwave.
  3. Add this to all of the other ingredients (except the Paprika) in a separate bowl & mix well.
  4. Sprinkle with Paprika (to make it beautiful)
  5. Cover and Chill to let the flavors develop.
  6. Serve & Enjoy!

Fantastic post! I like Cauliflower.


This is delicious and so much easier than potato salad. (no peeling potatoes!) I love how it is lower in carbs AND the flavour is great. The hard cooked eggs gave a nice added texture.

Definitely a new favourite side dish. I'm gonna take this to a potluck BBQ next week. :) It'll be a nice alternative to regular potato salad, i think.


I took it to a church football party and everyone raved over it! I hope your friends like it just as much! :o)
