My Frozen Strawberry Pies Recipe Midgelet / All my dishes

I have been doing this for years after we pick fresh strawberries and refer to it as a secret recipe which you all now know! This makes 4 small pies and one can just pull out the frozen berries and have fresh strawberry pie in the winter!

Ingredients
  • 4 quarts strawberries washed and sliced
  • 4 cups sugar ( less if berries are real sweet
  • 3/4 cup tapioca
  • 1/4 cup fresh lemon juice
  • 1 tsp salt
  • double crust recipes for 4 pies

Directions
  1. Mix all ingredients ( except pie crusts ) and pour and spread evenly into 4 foil lined pie plates. ( not deep dish )
  2. Freeze and seal tighly in plastic bags after berries are frozen.
  3. When ready to use, thaw until foil can be peeld off.
  4. Then Place berries into another pastry crust pie plate.
  5. Add top crust, crimp, seal and slash deeply in several places.
  6. Bake 425F about one hour.
  7. Cool completely.
  8. Serve pieces with some vanilla ice cream
