This is a terrific dish to take to a pot luck. Everyone will think you spent hours making this. Just smile and don't tell how easy it was!

Ingredients
  • 1 pound lean ground beef
  • 16 ounces tomato sauce
  • 1/4 cup onion, finely chopped
  • 1 tablespoon fresh parsley, minced
  • 1/2 teaspoon dried oregano, crushed
  • 1 teaspoon dried basil, crushed
  • 3/4 teaspoon salt, divided
  • 1/4 teaspoon ground black pepper
  • 2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
  • 1 pint cottage cheese
  • 8 ounces Mozzarella cheese slices, cut lengthwise into thirds

Directions
  1. In large skillet, brown ground beef. Drain any fat.
  2. Stir in tomato sauce, onion, herbs, 1/2 teaspoon salt and pepper.
  3. Simmer, uncovered, for 10 minutes.
  4. Meanwhile, combine spinach, cottage cheese and remaining 1/2 teaspoon salt.
  5. Spoon spinach mixture around edge of greased 13x9 inch baking pan.
  6. Pour beef mixture in center.
  7. Arrange cheese slices in lattice pattern on top.
  8. Bake at 375 degrees for 20 to 30 minutes.
