How to make it

  • Brown bacon until crisp,drain on paper towels.
  • Reserve 1/3 Cup of the bacon drippings.
  • Cool bacon,crumble and set aside.
  • In a large bowl,combine the flour,sugar,baking powder and salt.
  • In a medium bowl,whisk together reserved bacon drippings(cooled to room temperture),and the eggs,liquid smoke and milk.
  • Add egg mixture to dry ingredients,stir ( just )until moistened.
  • Fold in bacon.
  • Pour batter into a greased 5x9 loaf pan.
  • Bake in a preheated 350 degree oven for 45 to 50 minutes or until a toothpick inserted in center comes out clean.
  • Cool in pan 10 minutes,turn out onto cooling rack and cool completely.
  • Store in airtight container
  • Makes 1 loaf
