Ginger- Peared Poached Salmon With  Amaretto Cream Sauce Recipe
The salmon that was used was fresh sockeye . which will taste different than farmed or atlantic salmon. So please keep this in mind if you serve it to anyone. Still one of my favorite salmon recipes.

Ingredients
  • 3 cups pear cider
  • 4 - 8 oz salmon filets
  • 3 tbls. butter
  • 1/4 cup fine grond gingersnap cookies
  • 1/2 cup heavy cream
  • 1 oz amaretto liquer

Directions
  1. Heat 2 cups cider large shallow pan. reduce to simmer add the salmon and poach for 12- 15 min.. while salmon poaches heat butter in sauce pan ,add liquer and flame off alcohol,add gingersnaps and cook for couple min. . add remaining cider and cream simmer until thickened. remove salmon place on serving plates , spoon over sauce and serve.
