This is a fabulous pasta recipe with so many incredible flavors going on. Good as a light main dish with a salad or good as a side with a grilled meat. Enjoy

Ingredients
  • 2 tablespoons chopped white onion
  • 2 garlic cloves minced
  • 1 teaspoon olive oil
  • 1 cup shitake mushrooms sliced
  • 1 cup Italian tomatoes chopped (reserve liquid)
  • 5 small black olives sliced in half
  • 1/8 teaspoon crushed red pepper
  • 2 cups cooked penne pasta
  • 2 teaspoons grated parmesan cheese
  • Fresh basil leaves

Directions
  1. In 3 quart microwavable casserole combine onion, garlic and oil then stir to coat.
  2. Microwave on high for 1 minute.
  3. Add mushrooms and tomatoes with reserved liquid and stir to combine.
  4. Cover and microwave on high 7 minutes stirring once every 3 minutes.
  5. Add olives and pepper and stir thoroughly.
  6. To serve in serving bowl arrange pasta then top with mushroom mixture and toss to combine.
  7. Sprinkle with cheese and garnish with basil.
