Cauliflower Cashew Loaf Recipe
It's not easy to find a low-carb, high protein vegetarian main dish, but this recipe fills the bill. My veggie friends who are doing the South Beach Diet and/or Dr. Atkins all approved this recipe. Hope you like it!

Ingredients
  • I head cauliflower, chopped
  • 6 ounces cashews, chopped
  • 6 eggs
  • 4 tablespoons heavy cream
  • 8 ounces Cheddar cheese, grated
  • 4 scallions, chopped
  • 1 teaspoon garlic salt
  • 1/2 teaspoon salt and pepper, each
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika

Directions
  1. Set oven to 350 degrees F.
  2. Beat eggs with cream and seasonings.
  3. Add chopped cauliflower, cashews, green onions, and cheese; mix well.
  4. Press cauliflower mixture into greased non-metal bread pan. The more densely pressed the better the loaf will hold together.
  5. Bake at 350 degrees F for 45 minutes.
  6. Let cool 5 to 10 minutes before cutting and serving.

I really like the sound of this...a nice change from the typical cauliflower and cheese sauce.


2 quick questions: the cauliflower is uncooked when I mix this all tog??? are these roasted cashews or raw cashews??? it sounds delish!!!


Hi Blondeberry, thanks for your comment! Yes, the cauliflower is raw when you mix up the loaf -- best to chop it fairly small, the better to stick the loaf together. Your cashews can be raw or roasted, according to your preference (I like the roasted, but both ways are good.) Just make sure they are unsalted.
