How to make it

  • In samll bowl combine all seasonings and mix well.
  • Clean chickens discarding giblets from chicken, Pat dry .
  • Rub each chicken inside and out with seasoning.
  • Place 1 onion in cavity of each chicken.
  • Place in plastic bag or double wrap with plastic wrap.
  • Place in fridge over night or at least 4-6 hours.
  • Get your grill or smoker up to a temp of 250 degrees.
  • Place chickens in foil pans.
  • Cook uncovered for 5 hours or till a minimum temp of 180 degrees.
  • Let stand 10 minutes before serving.
  • I f coking on grill, I would use indirect cooking method.
  • This can also be baked in a 250 degree oven
