Smoked N Spicy Chicken

- 4 teaspoons salt shopping list
- 2 teaspoons paprika shopping list
- 1 teaspoon onion powder shopping list
- 1 teaspoon pepper shopping list
- 1/2 teaspoon cayenne pepper shopping list
- 1/2 teaspoon garlic powder shopping list
- 2 onions quartered shopping list
- 2 4lb chickens shopping list
- Favorite wood chips shopping list
How to make it
- In samll bowl combine all seasonings and mix well.
- Clean chickens discarding giblets from chicken, Pat dry .
- Rub each chicken inside and out with seasoning.
- Place 1 onion in cavity of each chicken.
- Place in plastic bag or double wrap with plastic wrap.
- Place in fridge over night or at least 4-6 hours.
- Get your grill or smoker up to a temp of 250 degrees.
- Place chickens in foil pans.
- Cook uncovered for 5 hours or till a minimum temp of 180 degrees.
- Let stand 10 minutes before serving.
- I f coking on grill, I would use indirect cooking method.
- This can also be baked in a 250 degree oven
