Dark chocolate fondants

- dark chocolate fondants: shopping list
- 8 ounces bittersweet chocolate, finely chopped shopping list
- 1 cup (2 sticks) unsalted butter, cut into 1/2"" cubes shopping list
- 4 large eggs (room temperature) shopping list
- 4 large egg yolks (room temperature) shopping list
- 7 tbs. granulated sugar shopping list
- 1/4 c. all-purpose flour sifted shopping list
- ice cream for serving (optional) shopping list
How to make it
- Preheat oven to 375F. Butter insides of 8 straight-sided ramekins with butter ( i used regular cupcake molds). Dust each with flour, tapping off excess.
- Put chocolate and butter in top of double boiler over hot, not simmering water. Melt chocolate and butter stirring until smooth and well-blended. Remove top part of double boiler and set aside to cool until warm.
- Put eggs, yolks and sugar in bowl of electric mixer. Beat on medium-high speed for 3 minutes, until thick and increased in volume. Add melted chocolate at low speed and mix until uniform in color. Remove bowl from mixer stand and fold in sifted flour.
- Transfer batter into greased ramekins ( again, i used regular cupcake molds). Bake for 12 to 16 minutes or until top is set, but center is still molten. Remove fondants from oven and unmold each over dessert plate. SERVE IMMEDIATELY!
- Top them with an ice cream bowl and ENJOY!
