Apple of Your Eye Cheesecake

- 1 c graham cracker crumbs shopping list
- 3 T sugar shopping list
- 1/2 tsp. ground cinnamon shopping list
- 14/ c butter or marg. melted shopping list
- 3 - 8 oz pkgs cream cheese, softened shopping list
- 3/4 c. sugar shopping list
- 3 eggs shopping list
- 3/4 tsp. vanilla shopping list
- 2 1/2 c chopped apples (Granny Smith) shopping list
- 1 T lemon juice shopping list
- 1/4 c sugar shopping list
- 1/2 tsp. ground cinnamon shopping list
- 6 T caramel ice cream topping, divided shopping list
- sweetend whipped cream shopping list
- 2 T chopped pecans shopping list
How to make it
- Combine first 5 ingredients in bowl; press onto bottom of lightly greased 9 in. springform pan. Bake 350 - 10 minutes; cool.
- In a mixing bowl, beat cream cheese & sugar until smooth. Add eggs; beat on low just until combined. Stir in vanilla. Pour over crust. Toss apples with lemon juice, sugar & cinammon. Spoon over filling. Bake 350 for 55-60 minutes or until center is almost set. Cool on wire rack for 10 minutes. Carefully run knife around edges to loosen. Drizzle with 4 T caramel topping. Cool for 1 hour. Chill overnight. Remove sides of pan. Just before serving, garnish with whipped cream. Drizzle with remaining caramel and sprinkle with chopped pecans. Store in fridge.
