Delicious Gluten Free Zucchini Bread

- 1 egg shopping list
- 3 tablespoons canola oil shopping list
- 2 tablespoons shortening shopping list
- 1/4 cup sugar shopping list
- 1 teaspoon vanilla extract shopping list
- 1/2 cup potato starch shopping list
- 3/4 cup cornstarch shopping list
- 1 tablespoon baking powder shopping list
- 3/4 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 3/4 teaspoon xanthan gum shopping list
- 1 teaspoon cinnamon shopping list
- 1/4 cup milk shopping list
- 1 cup zucchini, grated and packed shopping list
How to make it
- Preheat oven to 350. In large bowl, combine egg, oil, shortening, sugar, and vanilla. Mix well. Add all remaining ingredients except zucchini. Mix well to remove all lumps. Batter will be thick. Add zucchini and mix well.
- Pour batter into greased 9X5 loaf pan. Bake 45 minutes, until toothpick inserted in bread tests clean. Allow to cool in pan for at least 10 minutes.

Looks yummy! No wheat in it and I've got plenty of zucchini just hanging around :-)
