Creole Gumbo

- 3 Tbl butter shopping list
- 3 Tbl flour shopping list
- 1 chopped onion shopping list
- 2-3 cloves garlic - minced shopping list
- 1 16 oz. can whole tomatoes w/ juices - chunked shopping list
- 1 green pepper - chopped shopping list
- 2 bay leaves shopping list
- 1 tsp. dried oregano - crushed shopping list
- 1 tsp. dried thyme - crushed shopping list
- 1/2 tsp to lots of tobasco (to taste) shopping list
- 1.5 cups water shopping list
- 1/2 tsp salt shopping list
- 2 lbs. shrimp - peeled and deveined shopping list
- 1 - 7.5 can crab meat - drained, cartlidge removed (fresh is better if you have it) shopping list
- 1 tsp. file' powder shopping list
How to make it
- In large saucepan melt butter, blend in flour. Cook and stir until golden brown (make a roux).
- Stir in onion and garlic. Saute until onion is translucent.
- Stir in undrained tomatoes, green pepper, bay leaves, oregano, thyme, tobasco, 1 1/2 cups water and tsp salt.
- Bring to a boil. Reduce heat and simmer covered for 20 minutes
- Remove bay leaves
- Stir in shrim and crab and heat through (about 7 minutes)
- Remove some a ladel full of broth from the pot. Bled the file powder into the hot broth. When blended return broth to the pot. Stir until combined.
- Serve over rice
