How to make it

  • Chop lemon grass finely
  • zest one lime
  • dice shallots and garlic
  • if using fresh tarragon, remove from stem
  • In bowl combine lemon grass,shallots,garlic,tarragon,sugar champgne/ginger ale 3/4 of the lime zest and the juice of 1 and a half limes(save the other half a lime and the remaining zest)
  • Add water and mix well
  • Place this mixture in a leak proof bag and add chicken breast
  • Coat evenly and allow chicken to marinate for 15 minutes in the fridge
  • pre heat oven to 350 degrees
  • grease baking dish (mainly as precaution) lightly with olive oil
  • Place chicken and marinade into baking dish with lid, at this time add the salt and pepper.and cook at 350 degrees about 45 minutes,or until juice runs clear. Keep a little extra water on hand to compensate for evaporation if needed
  • Remove chicken and let rest for five minutes
  • Combine cooked rice and asparagus tips with remaing juices in baking dish and add the leftover zest and juice of half a lime,
  • Place in oven for five minutes at 350 degrees.
  • Serve and Enjoy
