Rhubarb-Strawberry Pie Recipe

Ingredients
  • PIE CRUST
  • 2 cups flour
  • 2/3 cups shortening( butter flavored)
  • 1 tsp. salt
  • 1/2 tsp. allspice
  • 1/2 tsp. cinnamon
  • 6-7 Tbls. cold water.
  • PIE FILLING
  • 4 cups rhubarb cut into 1/2 inch pieces
  • 2 1/2 cups strawberries
  • 1 1/4 cups sugar
  • 1/4 cup flour
  • 3 Tbl. quick cooking tapioca
  • 2Tbl. butter
  • 4 tbl.raw cane sugar
  • 1 egg beaten

Directions
  1. PIE CRUST
  2. Mix flour and spices together
  3. cut in shortening with a fork
  4. slowly add cold water until doughy
  5. Divide in half
  6. Spay bottom of 9 in pie plate with pam cooking oil
  7. roll out 1/2 of dough and line pie plate leaving dough hang over edges
  8. Other half of dough roll out and cut into 1 inch strips
  9. preheat oven to 375 degrees
  10. PIE FILLING
  11. In large bowl add rhubarb and srawberries
  12. in another bowl mix all other ingredients (except egg)
  13. Pour over rhubarb and strawberries and toss to coat
  14. let stand 20 mins. stiring a couple of times
  15. Put rhubarb strawberry mix into pie plate
  16. push all pieces together tightly
  17. starting in the middle of pie, place a 1 inch strip of dough one way and then another oppisite way and interwine them to make a lacey type of crust.
  18. seal ends of 1 inch srtips witjh overlapping dough from pie plate
  19. Beat 1 egg and brush top of crust
  20. Sprinkle with raw cane sugar
  21. dot with butter
  22. cover edge of pie with foil for 30 min.
  23. remove foil and continue to bake for 30 more mins.
