Rhubarb-Strawberry Pie

- pie crust shopping list
- 2 cups flour shopping list
- 2/3 cups shortening( butter flavored) shopping list
- 1 tsp. salt shopping list
- 1/2 tsp. allspice shopping list
- 1/2 tsp. cinnamon shopping list
- 6-7 Tbls. cold water. shopping list
- pie filling shopping list
- 4 cups rhubarb cut into 1/2 inch pieces shopping list
- 2 1/2 cups strawberries shopping list
- 1 1/4 cups sugar shopping list
- 1/4 cup flour shopping list
- 3 Tbl. quick cooking tapioca shopping list
- 2Tbl. butter shopping list
- 4 tbl.raw cane sugar shopping list
- 1 egg beaten shopping list
How to make it
- PIE CRUST
- Mix flour and spices together
- cut in shortening with a fork
- slowly add cold water until doughy
- Divide in half
- Spay bottom of 9 in pie plate with pam cooking oil
- roll out 1/2 of dough and line pie plate leaving dough hang over edges
- Other half of dough roll out and cut into 1 inch strips
- preheat oven to 375 degrees
- PIE FILLING
- In large bowl add rhubarb and srawberries
- in another bowl mix all other ingredients (except egg)
- Pour over rhubarb and strawberries and toss to coat
- let stand 20 mins. stiring a couple of times
- Put rhubarb strawberry mix into pie plate
- push all pieces together tightly
- starting in the middle of pie, place a 1 inch strip of dough one way and then another oppisite way and interwine them to make a lacey type of crust.
- seal ends of 1 inch srtips witjh overlapping dough from pie plate
- Beat 1 egg and brush top of crust
- Sprinkle with raw cane sugar
- dot with butter
- cover edge of pie with foil for 30 min.
- remove foil and continue to bake for 30 more mins.
