Cream Filled Cupcakes

- 1 package (18-1/4 oz.) devil's food cake mix shopping list
- ********************************** shopping list
- 2 tsp. hot water shopping list
- 1/4 tsp. salt shopping list
- 1 jar (7 oz.) marshmallow creme shopping list
- 1/2 c. shortening shopping list
- 1/3 c. powdered sugar shopping list
- 1/2 tsp. pure vanilla extract shopping list
- ************************************ shopping list
- Ganache frosting: shopping list
- 1 c. (6 oz.) semisweet chocolate chips shopping list
- 3/4 c. heavy whipping cream shopping list
How to make it
- Prepare and bake cupcakes according to package directions for cupcakes.
- Cool for 5 min. before removing to wire racks to cool completely.
- For filling, in a small bowl, combine water and salt until salt is dissolved.
- Cool.
- In a small bowl, beat the marshmallow creme, shortening, powdered sugar and vanilla until light and fluffy; add the salt mixture.
- Cut a small hole in the corner of a pastry or plastic bag; insert round pastry tip.
- Fill the bag with cream filling.
- Push the tip through the bottom of paper cupcake liner to fill each cupcake ( I filled the cupcakes through the top of them).
- In a heavy saucepan, melt the chocolate chips with cream; stir until smooth.
- Cool.
- Dip cupcake tops into frosting; chill for 20 min. or until set.
- Store in the refrigerator.
- Enjoy! :)
