How to make it

  • Put the butter and onions in a skillet that will hold all ingredients, and sautee the onions until clear.
  • Mix the potatoes and breadcrumbs in a large mixing bowl.
  • Add the sage, parsley, and zest to the mix.
  • Season with nutmeg, salt and pepper.
  • Turn the potato mix into the skillet, and turn the heat on to medium.
  • Heat the mix until very hot but not scorched.
  • Remove from heat and immediately stuff duck or chicken.
