How to make it

  • Boil the chicken in lightly salted water for about 1 hour
  • Allow to cool for about an hour then strip the meat off the bone
  • In the meantime mix together all the other ingredients in a bowl
  • shred meat into bitesize pieces and place evenly in the bottom of an ovenproof dish
  • Pour sauce over the chicken
  • Bake at 120 c for 20-30 minutes

    I, too, would serve this over brown rice for both the absorption of sauce and the texture.
