Gorgeous chicken bake. Fresh and rich. I must admit that I am at a loss as to what goes well with this, I normally eat it on its own like I would a bowl of soup. I would love suggestions

Ingredients
  • 1 Chicken, whole
  • 1 can Campells cream of chicken soup
  • 1 large cup mayonaise
  • 1 tsp. yellow curry powder
  • 1/4 can pineapple chunks
  • 1/4 can asparagus pieces + juice
  • Bowl
  • Ovenproof dish

Directions
  1. Boil the chicken in lightly salted water for about 1 hour
  2. Allow to cool for about an hour then strip the meat off the bone
  3. In the meantime mix together all the other ingredients in a bowl
  4. shred meat into bitesize pieces and place evenly in the bottom of an ovenproof dish
  5. Pour sauce over the chicken
  6. Bake at 120 c for 20-30 minutes

I, too, would serve this over brown rice for both the absorption of sauce and the texture.
