Super Duper Nanna Muffins

- 1/3 cup milk shopping list
- 1/4 cup vegetable oil shopping list
- 1 large egg shopping list
- 1/2 cup brown sugar shopping list
- 2 cups flour shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 cup mashed, very ripe bananas (about 2 medium) shopping list
- 2 tablespoons rum shopping list
- Crumb topping: shopping list
- 2 tablespoons cold butter (not margarine) shopping list
- 1/3 cup brown sugar shopping list
- 1/3 dry biscuit mix shopping list
- 2 teaspoons cinnamon shopping list
- You can double the crumb topping if you like a lot on each muffin shopping list
How to make it
- Preheat oven to 375, grease muffin pan
- In a large mixing bowl, combine milk, oil, egg and brown sugar.
- Beat with a fork or whisk until smooth
- Sift together flour, baking powder and salt and add to egg mixture.
- Mix in bananas and add rum, stirring until combined
- Use an ice cream scoop to evenly distribute batter in muffin cups. Be sure to fill only 3/4 of the way.
- Crumb topping:
- Put ingredients into flat bottom dish and use a pastry blender or two forks to break apart butter into small pieces. Sprinkle over each muffin
- Bake for 25 minutes, or until browned on top
