Lousiana Lentils and Rice

- 1 bag of lentils, washed and sorted shopping list
- 1 large onion, chopped shopping list
- 3 to 4 stalks celery, chopped(add some of the celery leaves) shopping list
- 4 cloves garlic, minced shopping list
- 1 cup thick sliced carrots shopping list
- 2 large russet potatoes, peeled and cubed shopping list
- 2/3 pound smoked sausage, sliced shopping list
- 1 stick butter shopping list
- 2 tablespoons powdered chicken bouillon shopping list
- 1/2 teaspoon celery seed shopping list
- 1 tablespoon garlic powder shopping list
- 1/2 teaspoon italian spice shopping list
- 1 bay leaf shopping list
- salt and pepper to taste shopping list
- water shopping list
- a few dashes of hot sauce ( I use Chrystal's) shopping list
How to make it
- Place lentils in large pot, cover with water and bring to a boil.
- Cover and Cook lentils 20 minutes over medium heat
- Sautee onions, celery, garlic, and sausage in butter until lightly browned.
- Add to beans.
- Add potatoes and carrots and bring to a boil.
- Reduce heat, add chicken bouillon and spices and continue to cook, covered for 20 to 30 minutes or until lentils are tender.
- Remove bay leaf and add hot sauce and salt and pepper to taste.
- Serve over hot rice (I usually serve this over yellow rice)
