How to make it

  • Place lentils in large pot, cover with water and bring to a boil.
  • Cover and Cook lentils 20 minutes over medium heat
  • Sautee onions, celery, garlic, and sausage in butter until lightly browned.
  • Add to beans.
  • Add potatoes and carrots and bring to a boil.
  • Reduce heat, add chicken bouillon and spices and continue to cook, covered for 20 to 30 minutes or until lentils are tender.
  • Remove bay leaf and add hot sauce and salt and pepper to taste.
  • Serve over hot rice (I usually serve this over yellow rice)
