Ingredients
  • 1/2 lb chicken breast, thinly sliced on the bias
  • 3 bell peppers, mixed colors, thinly sliced
  • 8 oz bamboo shoot slices
  • 3 spring onions, sliced
  • 2 garlic cloves, sliced
  • 2 tsp ginger root, chopped very finely
  • 3 dried chillis (you can leave them whole or for a more intense heat, chop them in small pieces)
  • Marinade:
  • 1 Tbsp rice wine or dry sherry
  • 1/2 Tbsp light soy sauce)
  • 1 tsp cornstarch
  • pinch of salt
  • Sauce:
  • 3 Tbsp light soy sauce (I like Pearl River Bridge)
  • 1 Tbsp cider vinegar
  • 1 tsp sugar
  • To thicken:
  • 1/2 Tbsp cornstarch
  • 1 Tbsp water
  • 1/2 Tbsp sesame oil

Directions
  1. Add chicken to marinade ingredients and set aside for 20 minutes.
  2. Mix together the sauce ingredients in a small bowl. Mix the cornstarch with the water and set aside.
  3. Heat a wok or frying pan and add 2 Tbsp peanut oil. When hot, add the chillis, onion, ginger, garlic and chicken and cook until the color changes. Remove from wok and set aside
  4. Add another tbsp oil to the pan and add the peppers and bamboo shoots. Cook for a few minutes.
  5. Add the chicken and the sauce ingredients back to the pan. Stir a couple of minutes then add the cornstarch mixture. Stir until it thickens.
  6. Turn off the heat and add the sesame oil and mix thoroughly.
  7. Serve with white rice.
