Ingredients
  • 1/4 white onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1/3 cup vegetable broth
  • 3 oz raw shrimp, thawed if frozen
  • 2 oz bay scallops or calamari pieces, thawed if frozen
  • 2oz Kamut pasta (I reccomend Eden Organic's Kamut Spaghetti)
  • 1 tbsp shredded fresh basil
  • hot pepper flakes, to taste

Directions
  1. Heat 1/4 cup water in a non-stick saucepan.
  2. Add onion and garlic. Cook, stirring, over medium heat for 3 minutes.
  3. Pour in broth and seafood and cook for 5 minutes, or until seafood is just opaque. Remove from heat.
  4. Meanwhile, bring large pot of salted water to a boil.
  5. Add pasta and cook according to the package directions.
  6. Drain well, and toss with seafood mixture, basil, and pepper flakes.

That sounds really intriguing - never heard of kamut being used in pasta - more familiar with it as a cereal/bread grain.....will have to look into this...
