Healthy Banana Blueberry Oatmeal Muffins Recipe
A great anytime muffin. I give one of these to my picky kids for breakfast, an after school snack, or as a pregame, energy boost. They especially like them when I sub the blueberries for chocolate chips!

Ingredients
  • 1 mashed banana
  • 3/4 cup low fat vanilla yogourt
  • 1/2 cup brown sugar
  • 1 egg
  • 1/4 cup canola oil
  • 3/4 cup quick cooking oats
  • 1 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup frozen blueberries

Directions
  1. Combine banana, yogourt, brown sugar, egg and oil in a large bowl.
  2. Add oats and allow to sit for 5-10 minutes.
  3. Combine dry ingredients.
  4. Add blueberries and dry ingredients to wet and stir until just combined.
  5. Put in paper lined muffin tin and bake in a preheated 375 oven, until tops are firm to touch.

Sounds similar to a muffin that I make my kids with bananas and chocolate chips. I like the addition of the yogurt! Sounds soooo tasty!

I made these yesterday with my daughter and I have to say, I was really nervous at how thick the batter was. I thought, "oh, here I go again, making a super dense muffin that no one will eat". But I was pleasantly surprised! They are delicious! I absolutely love them. We sprinkled a bit of turbinado on top before baking. Also, we had a ton of fresh blueberries we needed to use so I subbed those for frozen. YUM! Also, I was curious to know how many calories and fat they had, which turns out to be 177 calories and 6 fat if you make 12 muffins from the batter. THANKS for posting!!!
