Ingredients
  • 2 Tablesps. olive oil
  • 2 large onions; chopped (about 2 cups )
  • 3 cloves garlic; crushed
  • 1/2 cup chopped celery
  • 2 cups peeled sweet potatoes or winter squash; medium cubed
  • 3 cups broth; can be chicken, beef or vegetable
  • 1 bay leaf
  • 2 teasps paprika
  • 1/2 teasp. turmeric powder
  • 1 teasp. dried basil
  • Salt to taste
  • Dash ground cinnamon
  • Dash cayenne ( or to taste )
  • 1 cup chopped fresh or canned tomatoes
  • 3/4 cup chopped green bell-pepper
  • 1 and 1/2 cups cooked chick peas ( canned O.K. )
  • 1 Tablesp. Tamari or reduced sodium Soy Sauce

Directions
  1. 1) In a large saucepan or stockpot, heat the oil & saute onion, garlic, celery & sweet potato or squash cubes for about 5 minutes.
  2. 2) Add the broth, bay leaf, paprika, turmeric, basil, salt, cinnamon & cayenne. Bring soup to a boil, then reduce heat to medium-low & simmer for 15 minutes.
  3. 3) Add the tomatoes, bell pepper & chick peas, and simmer the soup for 10 minutes longer. Stir in the tamari or soy sauce & serve with a nice, crusty loaf of bread.
