How to make it

  • Preheat broiler, and place oven rack approx. 4 inches from the top. Coat the baking sheet with cooking spray. (I also like to lay tinfoil down to make clean up easier.)
  • Arrange tomato halves cut-sides up on the baking sheet. Try to make the tomatoes sit level. Spread mustard on tomatoes, and top with cheese.
  • Combine breadcrumbs, capers, chives, butter and cayenne pepper, if desired, in small bowl. Sprinkle breadcrumb mixture over tomatoes.
  • Broil for 2 to 3 minutes, or until cheese is bubbling hot and starting to brown. (Or until the tomato starts to tip and the toppings start slipping off)
