Cheesey Broiled Tomatos

- 6 small tomatoes shopping list
- 2 tbs Dijon mustard shopping list
- 2/3 cup shredded swiss cheese shopping list
- 1/4 cup whole-wheat breadcrumbs shopping list
- 1 1/2 tbs capers, rinsed and drained shopping list
- 1 1/2 tbs chopped chives shopping list
- 1 tbs unsalted butter melted shopping list
How to make it
- Preheat broiler, and place oven rack approx. 4 inches from the top. Coat the baking sheet with cooking spray. (I also like to lay tinfoil down to make clean up easier.)
- Arrange tomato halves cut-sides up on the baking sheet. Try to make the tomatoes sit level. Spread mustard on tomatoes, and top with cheese.
- Combine breadcrumbs, capers, chives, butter and cayenne pepper, if desired, in small bowl. Sprinkle breadcrumb mixture over tomatoes.
- Broil for 2 to 3 minutes, or until cheese is bubbling hot and starting to brown. (Or until the tomato starts to tip and the toppings start slipping off)
