Ingredients
  • 6 small tomatoes
  • 2 tbs Dijon mustard
  • 2/3 cup shredded swiss cheese
  • 1/4 cup whole-wheat breadcrumbs
  • 1 1/2 tbs capers, rinsed and drained
  • 1 1/2 tbs chopped chives
  • 1 tbs unsalted butter melted

Directions
  1. Preheat broiler, and place oven rack approx. 4 inches from the top. Coat the baking sheet with cooking spray. (I also like to lay tinfoil down to make clean up easier.)
  2. Arrange tomato halves cut-sides up on the baking sheet. Try to make the tomatoes sit level. Spread mustard on tomatoes, and top with cheese.
  3. Combine breadcrumbs, capers, chives, butter and cayenne pepper, if desired, in small bowl. Sprinkle breadcrumb mixture over tomatoes.
  4. Broil for 2 to 3 minutes, or until cheese is bubbling hot and starting to brown. (Or until the tomato starts to tip and the toppings start slipping off)
