Citrus Beef Stir Fry Recipe
This is a very tasty beef dish sure to please all. It's easy, beefy, saucy, orangey and very tasty.

Ingredients
  • 2 large oranges
  • 3 tablespoons dry sherry
  • 3 tablespoons soy sauce
  • 1 tablespoons cornstarch
  • 1 pound lean boneless beef trimmed of fat and cut across grain into 1/4" thick slices
  • 2 tablespoons fresh minced ginger
  • 1-1/2 cups bean sprouts
  • 1-1/2 cups fresh pea pods ends and strings removed

Directions
  1. Grate peel from 1 orange then squeeze juice from both oranges.
  2. Measure juice and if you have less than 3/4 cup add enough water to make it equal this amount.
  3. In small bowl stir peel, orange juice, sherry, soy sauce and cornstarch then set aside.
  4. Heat a wok over high heat then when pan is hot add beef and ginger.
  5. Cook stirring until beef is browned then with slotted spoon transfer beef to a bowl.
  6. Pour orange juice mixture into pan and bring to a simmer.
  7. Add bean sprouts and pea pods then cook stirring constantly for 1 minute.
  8. Mix in beef and serve over rice.
