Savory Cheeseball Recipe
To make ahead. A great appetizer any time of the year. Serve with crackers, bagel rings or any hard bread. Excellent as part of a buffet supper or brunch, too.

Ingredients
  • 2 pkgs. cream cheese
  • 8 oz. shredded sharp cheddar (extra sharp is even better)
  • 4 - 6 oz. crumbled blue cheese
  • Scant 1/4 cup finely minced onion
  • Couple dashes Worcestershire sauce
  • Freshly ground black or green peppercorns to taste
  • About a cup of finely chopped walnuts

Directions
  1. Combine all except the walnuts into a food processor.
  2. Process until creamy and smooth.
  3. Alternatively, mash together with a fork or potato masher until smooth; this takes longer and the result is not as creamy, but still good.
  4. Scoop out the mixture and form into a ball.
  5. If it's too mushy, chill a bit until you can form it better.
  6. Roll this in the walnuts, coating it completely.
  7. Place on a small plate and chill again, covered in plastic wrap, at least overnight or up to 2 days before serving.
  8. Once started, keeps refrigerated 2-3 days more.
