How to make it

  • Catch or "obtain" fresh Albacore
  • Slice into one inch thick steaks, or "medalians"
  • Put into a zip lock bag
  • Add salt, pepper, garlic, chili flakes, olive oil, and lemon
  • Marinate for 30-50 min.
  • BB-Q on high heat for a couple minutes per side-
  • Don't over cook- less is more
  • Serve with simple sticky rice, and side of greens.
  • I like Asparagass or broccoli
  • Also serve with tartar sauce and Soy Sauce
  • For simple tarter sauce just take some Mayo and add chopped pickles, a little pressed garlic, lemon, salt&pepper, and perhaps some tabasco...among many other possibilities. Just don't buy some shit from the store.
  • Good fresh fish is the key, along wit high heat and a relatively quick time on the grill.
  • Grilling the veg is a nice way to go- you could even marinate them in much the same way you did the fish. For this recipie I take all my influence from those times I come home after a long day or two, fishing and want to enjoy the "fruite del mar" asap. This meal is quick and easy, and tastes great.
  • When I catch up on some rest we could talk about how to smoke the Albacore. Or make Sushi, and whatever- love to hear your sujestions.

    Perfect. Used McCormick's Perfect Pinch Cajun spice instead of chili flakes. Side dish -- grilled sliced zuccini with MCormick's Garlic & Spices sprinkled on, sprayed with olive oil. YUM. Barely could save some for tomorrow's lunch, LOL.
